Eating the old way but learning the new recipes.

By the early 20th century, the Straits Chinese has grown in numbers. Some got very established and wealthy. Some even have male servants who cooks for them. The old Chinese inspired favourites are unforgettable. Today, we are still enjoying the old food like 5 spiced pork roll, duck in salted mustard soup or kiam chye ark, tau ewe bak or dark sauced pork stew.

I may not be totally right but fusion is not only with Malays, Indians or Chinese. A 100 to 150 years ago, we were having British, Dutch, and Armenians sailing round the world discovering new frontiers. Nutmeg powder, Worcestershire sauce, mustard powder are inspiration from our founding fathers.
